The hard-anodized aluminum nonstick cookware in Anolon's Professional line delivers exceptional results and satisfying features. Because it's pure aluminum, the cookware distributes heat quickly and evenly, both across the bottom of the pan and up its sides. The hard-anodizing process makes the pieces harder than stainless steel and creates an excellent surface for nonstick coating to bind to. The end result is a convenient cookware that releases food easily, cleans up without fuss, and is markedly resistant to daily wear and tear. Plus, it's guaranteed never to chip, crack, or peel.A handsome member of the Professional line, this 12-inch open stir-fry pan has fine balance, pleasant heft, and generous dimensions. It requires surprisingly low temperatures to cook food thoroughly and little to no oil, thanks to the top-of-the-line Dupont Autograph nonstick coating. The pan's 18/10 stainless-steel stay-cool handle features a comfortable rolled construction, permanent rivets, and a hole for hanging. Oven-safe to 500 degrees F, the pan performs best with occasional conditioning and wooden or plastic utensils.
